Description

Fresh, light, and low-carb shrimp & veggie rice paper rolls made without noodles. Perfect for a quick lunch, snack, or healthy dinner option.


Ingredients

12 rice paper wrappers

200g cooked shrimp (peeled and deveined)

1 cup shredded lettuce

1 cup cucumber sticks

1 cup carrot sticks

1/2 cup pineapple chunks

Peanut or dipping sauce of choice


Instructions

1. Cook shrimp with salt, pepper, and garlic until pink and set aside.

2. Wash and slice cucumber and carrots into thin sticks, shred lettuce, and cut pineapple into small chunks.

3. Fill a shallow dish with warm water and dip rice paper wrapper briefly until soft.

4. Layer shrimp, cucumber, carrot, lettuce, and pineapple in the center of the wrapper.

5. Fold in the sides, then roll tightly from the bottom up.

6. Serve immediately with your favorite dipping sauce.

Notes

Best served fresh. If making ahead, wrap tightly in plastic wrap and refrigerate for up to 4 hours.
