Ingredients
12 oz lean beef (flank or sirloin), thinly sliced
2 cups broccoli florets
1 red bell pepper, sliced
2 cloves garlic, minced
1 tsp fresh ginger, grated
2 tbsp low-sodium soy sauce
1 tbsp cornstarch + 2 tbsp water (slurry)
2 tbsp avocado oil
1 tsp sesame oil (optional, for finish)
Instructions
1. Slice beef thinly against the grain; chop all vegetables into even pieces.
2. Whisk soy sauce, garlic, ginger, and cornstarch slurry together to form the sauce.
3. Heat avocado oil in a wok until very hot; sear beef for 2–3 minutes, then remove.
4. Add vegetables to the wok and stir fry 3–4 minutes until crisp-tender.
5. Return beef to the pan, add sauce, and stir fry for 1–2 minutes until coated.
6. Finish with sesame oil drizzle and serve immediately.
Notes
Serve over brown rice, quinoa, or cauliflower rice for balance.
